Broccoli and Cranberry Salad

During my busy days, I try to make food that are quick, healthy and can last up to 3 days. When I only have a few time to spare, I don't like to spend more than 30 minutes in the kitchen making food. So I make food in more than 3 servings.
This recipe is healthy, tasty and it takes no more than 20 minutes to prepare.


Ingredients

1 bag of 12 oz. broccoli florets
1/2 cup of orange flavored cranberries
1 cup of shredded carrots
6 oz. 98% fat free Canadian style bacon
4 tbsp olive oil
2 tbsp rice vinegar
Trader Joe's (TJ's) 21 Seasoning salute - to taste
Purple cabbage for garnishing (optional)

Method

Dressing
In a small bowl, mix the olive oil and rice vinegar. Add the TJ's 21 seasoning salute - to taste. Mix well with a spoon or a small whisk. Set aside.

In the meantime, cut the broccoli florets into smaller pieces, and the Canadian Bacon in cubes.
In a large bowl, mix the broccoli florets, shredded carrots, cranberries and Canadian bacon.
Pour the dressing into the bowl of vegetables and mix well with a spoon. It is now ready to serve. Serves 5-6.
